Directions: Makes one 9 x 9 inch pan of brownies. All You Need is: 1/3 cup melted margarine (substitute dairy free margarine or butter according to your needs); 3/4 cup cold water; 2 tsp. vegetable oil; Brownie mix. 1. Heat oven to 350 degrees F. Grease the bottom and sides of a 9×9 inch pan. 2. Combine margarine (substitute dairy free margarine or butter according to your needs), cold water, vegetable oil and brownie mix in a bowl, scraping occasionally until well blended. Pour into pan and spread evenly. 3. Bake at 350 degrees F for 16 minutes for fudge-like brownies or 18 minutes for cake-like brownies. Reduce baking time by 2 minutes for dark pans. Brownies are done when a toothpick inserted into the center comes out clean. Cool 10 minutes before serving. 4. Yields: 36 brownies Ingredients: 1 (18.25oz.) pkg. brownie mix 2 eggs ½ cup oil ¼ cup cold coffee 2 cups chunky peanut butter ½ cup butter, softened 2 cups powdered sugar 1 tbsp. plus 1 tsp. vanilla, divided ½ cup heavy cream 1 cup chocolate chips Chopped roasted peanuts for garnish Preparation Directions: ~ Preheat oven to 350 degrees. Prepare brownie mix according to pkg. instructions using coffee in place of water. Cool completely. ~ Meanwhile in a large bowl, beat peanut butter and butter on medium until well blended. Gradually add powdered sugar and tbsp. of vanilla, beat until smooth and fluffy. Spread over brownies. ~ In a saucepan, heat heavy cream and chocolate over medium heat, stirring frequently until chocolate is melted and smooth. Stir in tsp. vanilla. Cool 5 minutes and spread over peanut butter filling. Sprinkle with peanuts. Refrigerate until firm. Cut into squares.

Ingredients:

4 Eggs
1 1/2 c Oil
2 cup Sugar
2 cup Flour
2 tsp Soda
2 tsp Cinnamon
1 tsp Salt
4 tbsp Cocoa
1 tssp Vanilla
3 cup Grated zucchini
1 cup Chopped nuts

Directions:

Beat together eggs, oil and sugar. Mix together the dry ingredients until smooth.
Mix all together well and spread into greased jelly roll pan. 350 degrees for 25-30 minutes

Ingredients:

2 c All-purpose flour
1 ts Baking soda
1 ts Baking powder
1 c Cocoa powder
1 pn Salt
1 1/2 c Sugar
1 c Soy milk
2 tb Lemon juice
2 tb Oil
1/2 c Walnuts, optional

Directions:

Preheat oven to 350F & lightly oil a 8 X 8 inch baking pan. Combine all the dry ingredients in a large mixing bowl. Mix well. Combine the liquid ingredients & stir into the dry ingredients. Mix well & mix in the walnuts if using.
Pour batter into prepared baking pan & bake in the preheated oven for about 40 to 45 minutes or until the brownies test done. Cool before serving.
